Week 11 Summary

1. Masuda san's Introduction 

• Mr. Masuda, the 15th-generation owner of Tsuki no Katsura, a sake brewery celebrating its 351st anniversary this year, introduced himself to us. 

• He told us about his career before becoming the president, explained how the succession system works, and shared what kind of brewery Tsuki no Katsura is. 

2. Learning More about Tsuki no Katsura 🌕🐇 

• We learned about the brand concept of Tsuki no Katsura, the teachings passed down from the previous generation, and the company's vision for the future. 

• We also learned about the long history of one of the oldest sake breweries in Fushimi and how they continue to preserve tradition while updating their brand to meet the needs of modern times. 🍶 

3. Learning More about Sake 

• We learned how sake is made, including the ingredients and the brewing process. 

• Kyoto ranks second in Japan for sake production, and Fushimi is especially famous for sake brewing because of its abundant underground water. We also learned about the differences between the characteristics of sake produced in Fushimi and in Hyogo Prefecture, which has the highest sake production in Japan. 💧 

4. Q&A Session with Masuda san🕒 

• We had the opportunity to ask Masuda san many questions about his way of valuing personal space and balance in life, as well as his future career.
